**Substitutions welcome. While we do not have a dedicated gluten free production area, we do offer a bread option that was formulated without the inclusion of gluten.

Notes about our sourcing

All of our bread is baked in house using old world techniques.

All of the proteins we serve are humanely raised and free of hormones or antibiotics.

All of the eggs we use are either local farm eggs, or humanely raised and cage free.

All of our cane sugar comes from the Native Green Cane Project in Brazil, a sustainable cane production that is certified non-GMO and Organic.

All of the dairy we use is certified non-GMO and Organic.

All of the coffee and tea we source is either direct trade or fair trade.

All of the single origin chocolate we serve is manufactured by us, here in our factory.

We are proud to have a fully traceable supply chain for our cocoa beans through our direct trade relationships.

We are proud to partner with and use Valrhona Chocolate, in addition to our own chocolate, in our bon bons.

We strive to prepare as much as possible in house. Anything we are not able to produce ourselves, we source from the most trustworthy and responsible purveyors we know.

We use organic and local ingredients whenever possible, and all of our proteins are humanely raised. We love to talk about our sourcing – curious? Just ask :)
