Biche is an agricultural village in east Trinidad and Tobago with just a handful of smallholder farms that contributed to this microlot. The wet cacao produced by the farm workers in Biche was fermented and dried by Harryman Chattergoon and his family at the Tabaquite Fermentary. Harryman operates one of the only licensed fermentaries on the interior of the island that is executing high quality post-harvest processing.

Each bar in our Origin Series is truly a collaboration between us and the farm workers who grow, harvest, ferment, and dry the cacao. Our goal is to honor their hard work by processing the cacao as minimally as possible to reveal the flavors inherent in the beans.
